I feel much better now that I've had a nap compared to my post earlier today.
So I want to quit my job and open up a cupcake shop. It's not that I don't like my job but I want a job where I'm constantly moving and I can combine my creative side with my ADD and business orientated side. Therefore a Cupcake Shop would be a perfect idea. I've been practicing on all my friends with much success. So far I haven't really had a "failed" recipe.
How this all started is when my friend Katy blogged about Dozen's Bakery in Pittsburgh (I tried to find Katy's inspiring post but I couldn't find it in the archive) Well anyways that looks like my dream place. Creative pairings of textures and flavors with even special vegan recipes.
In order to get prepared to open up shop I decided that if I do want to make it one day then I need to have a bunch of recipes available. My first cupcake that I've scored on is a Coconut Cupcake with Chocolate Ganache. One recipe that I made for a friend's moving out party was a dark chocolate cupcake with a Chamboird frosting. Every one liked them, even my friend that doesn't like sweets, but I still think I need to work with the texture of the frosting. Another favorite that I made for St Patty's day was an Almond Joy Cupcake with a Chocolate Coconut Cake with Green Almond frosting. They were Awesome. For Easter I made Cherry Lemon which was a cherry cupcake with lemon frosting and an Easter rendition of the Chocolate Almond Joy.

The one that I made this weekend for my friend Marie's birthday was a Strawberry Daiquiri Cupcake. It was a strawberry cupcake soaked with a rum syrup and a cream cheese strawberry frosting. To decorate it I had red sprinkles and a strawberry that has the stem discarded and a mint leaf to act as the stem. They were really pretty but I think the frosting needs work. I don't like cream cheese so I'm not sure if that's why I didn't like it but I'd also like a thicker frosting.

My next new cupcake recipe will be made for my apartment warming party. It will be in August sometime and I will include a picture as I'm sure if they don't taste great they will at least look awesome.
